Sweet Corn and Potato Gratin




This recipe works best if the potatoes are VERY finely sliced so it is best to slice them with a madoline or a food processor.  Try adding bacon or shredded chicken to the sauce for an entire meal on it's own.




Ingredients:



  • 1 medium onion, thinly sliced
  • 2 tablespoons butter
  • 2 garlic cloves, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup whole milk
  • 1kg  potatoes, scrubbed and cut into thin slices (easiest done with a mandoline or food processor)
  • 1 can (400g) cream-style corn
  • 1 cup of grated cheese and a little to sprinkle on top


Directions:

  • In a large saucepan, saute onion in butter until tender. Stir in the garlic, salt and pepper,  milk, cheese and cream corn.
  • Layer 1/3 of the potatoes in an 20cm (8-in) greased baking dish. 
  • cover with half of the corn mixture then top with potatoes, repeat ending with potatoes and lightly sprinkle with cheese.
  • Bake at 350° for 1 hour or until golden brown and potatoes are tender.
